ALBATROS, the company taken over by M. François GOUSSEAU in 1987 sales more than 50 millions packs of flavoured croutons in a year. It represents 50% of the sales and make them the leader. The increase dwells on a soups and salads market growth of 15% per year. More potential lies in the snack market : can flavoured croutons replace roasted peanuts in fashionable wine bars, as it is the case in Hong Kong?

Roco - Breakfast cereal coating with sugar syrups
The requirement was for a small to medium size line to tackle an emerging market in Algeria : sugar-coated breakfast cereals. The Biturbine proved adequate in handling a relatively limited output (120 kg/h).

In addition, the syrup was formulated with modified starches to give a gloss to the cereals, which results in a very sticky liquid. Tested against a drum, the Biturbine had a better self-cleaning behaviour allowing for longer production runs.

The same applies for larger outputs, from 150 up to 1500 kg/h of dry infeed base product, very much according to the market size : Ecuador, China, Australia, England, Germany, USA...

Altec - Shredded cheese coating / anticaking
A new vendor concept where the pizze are freshshly prepared from refrigerated ingredients and cooked before the customer. In the case of the grated cheese, it had to be coated with an edible oil with antisticking property to avoid lump forming and allow a correct distribution on the pizza.
Grated or shredded cheese is in higher demand from consumers or ready meals producers as an ingredient to enhance the palatablity of food. To meet the demand and a lower cost, cheese curing is achieved under a film. It results in a higher water content i.e. in a higher yield. An anticaking agent such as microcristaline cellulose or starch needs to be applied. If processed continuously, the optimal design is a coating Biturbine (for its gentle handling of the cheese shreds) in line with a weigh band feeder to ensure a consistent feed.

Ice cream industry - Cereal crispy biscuit coating with barrier against moisture migration
It is common need to prevent moisture migration between to the inner part of a food product and the environment or two parts of the same food product but with different water activities. Fat is the edible material selected because it is hydrophobic. Generally, the longer the fatty acid chains the more efficient the barrier, tbut the more it gains a waxy taste. The higher the melting point and the more it is sensitive to micro breaks which will let water vapor migrates. Therefore, mixes of vegetable fats with different melting points are used to give plasticity and retain hydrophobicity. Best results are obtain on flat surfaces on which the fat mix is sprayed. It is efficient within period of times limted to a few weeks. So far, no solution exist for product with long shelf-life required in high moisture content environment. If such mixes are developped then the application method only has to garanty that thickness is constant without breaks.
